We picked about a gallon of blackberries yesterday, along the canal, so today I bought a bag of GF flour and made a pie. It was so quick and easy.
Using 2 forks, cut 1/2 cup
shortening into 1 3/4 cps
GF flour blend (with 1/2 tsp
salt). When in tiny particles, add 6 Tbsp
ice water, and mix quickly into a ball. Divide the ball into 2 equal parts, and roll each between two sheets of plastic wrap.
For the filling, pour 4-5 cps of
blackberries into the bottom crust, then sprinkle 3/4 cup
sugar and 4 Tbsp
GF flour blend over the berries. Put the top crust on, seal the edges, cut slits, and place on a baking pan (in case it bubbles over).
Bake at gas mark 5 for about 50 minutes, or until crust is brown and filling is starting to bubble.
